I had a similar situation on my 2000 K1500 sub last summer. First I was low on refrigerant so it wasn't cooling. The tech recharged and we were good. Left on a 1200 mile trip and found part way in, that we were getting periods of no cooling and no airflow. I would turn off the AC since it didn't work and after we next stopped for gas and food, everything worked again - for a short time. Then the cycle started over again. Finally, I blew the resistor pack and the fan cut out completely.

The end result was that the AC was freezing over due to a bad low pressure switch. We had a good charge of refrigerant. With the AC coils frozen over, the fan resistor soon burned out. The tech replaced the low pressure switch and the resistor pack and all has been good since. Really a cheap fix.
