A few lifetimes ago, while working as a DM for one of the tool truck companies, I was able to tour a manufacturing plant that made wrenches and other hand tools. "Incremental equalized torque" was the term used by the engineer she was describing the hows and whys of the way a line wrench fits around the nut. If you read Gorilla Bob's description carefully, you can picture how this technique is accomplished in one step, by having pressure placed on more than one flat of the nut at a time.
One of the other benefits of a crow foot style line wrench is that I have found a number of places where it was hard to get a "regular" wrench onto the fitting because exhaust or frame components being too close. With the crow foot, you can slide it onto the line, up onto he fitting, then attach the ratchet, or an extension and ratchet. Yes, a little spendy, but when you want to do it right and only do it once...
