The idea of how much cooling power there is in the system is significantly different from expecting it to cool down to a specific temp like a home freezer would. It makes it alot clearer now why the output air temp would vary day-to-day.
The conclusion to this is that my tech checked the AC and found a leaky schraeder valve on the low pressure line and that I had lost about 2/3 of the refrigerant. I had dye in the system from a previous issue a year ago so he should have been able to see if it was leaking elsewhere but nothing appeared. $100 invested in staying cool on the road in the near future.
I hope this recharge holds for more than a year.
