Hope the next year will be a good one and everyone enjoy the last day of this year.
We are going to have another party next week and have two prime ribs, just like these two we had
for Xmas. These two are from a local market which still has a traditional butcher (I'm a journeyman
butcher from time when dad owned a specialty butcher/grocery shop). He does this for all customers,
but puts the bow for an ex-butcher... :)
Bone in, but loosened, seasoned inside (salt/pepper/garlic cloves). Bacon wrapped
outside and then tied back together. Each 7 ribs and the norm is to cut 3 steaks per rib, but I
cut'm with 2 per rib...we like our beef...
Am grilling another turkey for tonights crowd.
Don't try to grill a prime rib, or if you have and it came out....tell me HOW2 do it. As mine
caught on fire and almost couldn't put it out. Saved it and finished it in the oven. Too much
fat and turned out to be the fuel for the fire....
This is a Costco and I had to do the butchering. Picture is of it before I seasoned and tied it
back together. Cost is the same between this Costco and Key market ($7.99/lb).
