Me thinks you know me too well... :)
Easy decision for 'me', as I grew up with knives. Both from dad being a butcher with me forced
slave labor (as I used to say, but hey, now I know HOW2) in his butcher/grocery
shop...and...his buddy my Uncle Bill who taught me all sorts of things. One was tools and
maintenance of them.
I 'like' to spend quiet time sharpening my stuff, as I know it will work better and do a better
job. Part of why paid $45 bucks EACH for those diamond stones and these are my second set, as
wore out the first set, which cost even more.
Carried on when I had some design classes with machining. Tools with cutting edges again.
Just about any quality stone will do and the bigger the better (largest surface area). Just
get a fine stone if only one, but a med grit for the initial shaping/forming of the over all shape
of the blade edge. I've gone out to the shop and used the grinding wheel just to get it into
shape.
Remember, only the cutting edge area need be stoned. Many think they have to lean on it
because they are trying to do the whole blade surface. Very little area is actually ground away
if done right.
A lot has to do with 'your' out look on this. What level of knives do you buy/own? Not price,
though an indicator, but the quality of it. How much do you use it or expect to do in the
kitchen? Would this be a 'chore' or enjoyable?
I used to buy expensive knives, but with the budget crunch, buy quality but used. Also now buy
from whole sale kitchen supply. Quality (enough) blade, but plastic handles.
If all this a 'chore', then the decision is how much you wish to spend on the tool with the built
in angles and designed for ease of use so that it won't be a chore or as much of a chore.
In-decision is usually because of a lack of information/knowledge in that area. Then HOW2
weigh them against each other. Hope my comments have helped you make up your mind, and others too.
For me, part of the enjoyment is in the research into the design and HOW2s...
