You can go big to fit all on one disk, or you could do multiple drives. Do you have a network for all the machines? If so, you might want to consider NAS (Network Attached Storage)...Google NAS to read more info.

Yes, if you want to do this, I'd recommend using a backup imaging program like Norton Ghost or Drive Image. These will create a single image file of the entire drive that you can restore from, and I believe both will do incremental updates to the image, meaing they only backup the files that have changes once the first backup has been accomplished.
