The plastic fitting with the hose is a vent. Don't mess with it.
The front diff has drain and fill plugs. Pull them both out to drain, put bottom one back in and fill, cap off top. It couldn't be much easier.
I suggest using Mobil 1 75W-90 or AMSOIL gear oil.
